Kokuho Rice (sushi rice)



Preparation tip:

To make 3 1/2 cups (14 oz / 400g) of cooked rice. Mix 1 1/2 cups (16 oz / 450g) of the rice with 2 cups (500 ml) of water in a pot. Let stand for 30 minutes, then put the pot over heat (don’t drain and refill), bring to a boil, then cover and reduce to a simmer for 20 minutes or until water is absorbed. Remove from heat; leave covered and let sit for 15 minutes. Fluff with a fork. Cover, let stand another 10 minutes, then serve…
